Try this delicious, gluten free version of homemade granola. Eat it alone or over yogurt as a parfait. Add different nuts and seeds to make it your own!

2 Cups Gluten Free Rolled Oats
¼ Cup Coconut Flakes
½ Cup Almond Slivers
1 Tsp Cinnamon
½ Tsp Nutmeg
1 Tsp Salt
¼ Cup Maple Syrup
¼ Cup Peanut Butter or Almond Butter
¼ Cup Coconut Oil
1 Tsp Vanilla
Preheat oven to 300 and line a baking pan with parchment paper.
In a large mixing bowl, add dry ingredients (oats, nuts, cinnamon, coconut flakes, nutmeg, salt.) and stir them together.
On the stove top in a small saucepan on low heat add coconut oil, peanut butter, maple syrup. Mix together until smother. Add in vanilla and whisk.
Pour wet ingredients over dry ingredients, and stir till all of the oats and nuts are covered entirely.
Pour granola onto pan and spread it evenly. Bake in the oven for 25-30 minutes, or till the edges are just starting to gain a bit of color.
Take it out and let it cool completely. The granola will get crunchy as it cools.
Let granola cool entirely, before breaking it up into pieces.
