This is one of the easiest meals you could make on a busy evening. Add veggies and your favorite sausage and seasonings to a sheet pan and bake. That’s it! It filling and healthy and a great way to use up those vegetables that are starting to turn!

1 cup mini sweet peppers
1 Zucchini or yellow squash sliced
2 cups cauliflower florets
2 cups butternut squash diced
4 sausage links
½ onion chopped
1 Tbsp smoked paprika
1 Tsp Garlic powder
1 Tbsp Zaatar or Italian seasoning
1 Tsp Salt and Pepper
3 Tbsp Oil
Preheat oven to 400.
Chop, slice and dice all the vegetables.
Slice the sausage.
Add everything to a large sheet pan.
Coat with oil and seasonings. Mix everything together until evenly coated.
Bake 20-25 minutes until sausage juice runs clear and vegetables are tender and charred a bit around the edges.
Remove and serve.
