Try this fast, healthy spin on chowder with this Instant Pot salmon chowder. Made in 30 minutes!

Ingredients
1 Cup sweet Potatoes Diced
½ yellow onion diced
1 Jalapeno Minced
1 Red Bell Pepper Minced
1 Can Corn drained
2 Garlic cloves Minced
1 Tsp Thyme
1 Bay Leaf
1 Can Coconut Milk
3 Cups Vegetable Stock
1 lbs piece salmon fillet
1 teaspoon salt
½ teaspoon black pepper
2 teaspoons fresh lemon juice
Garnish with Green onions
Instructions-
Peel and cut potatoes into 1/2-inch cubes.
In Instant Pot add yellow onion, corn, garlic, jalapeno, red bell pepper, thyme, bay leaf, potatoes, salmon, coconut milk and vegetable stock.
Cook on high for 6 minutes.
Quick Release. Remove the lid and break up the salmon.
Add in lemon juice.
Taste and adjust seasoning with salt and pepper.
Serve and garnish with chopped green onions.
