2 cups riced cauliflower
1 tablespoon coconut oil
½ yellow onion diced
2 cloves garlic, minced
1 teaspoon ground turmeric
1 teaspoon ground curry
½ tsp dried thyme
1 carrot, diced
1 zucchini diced
1-15 oz can coconut milk
½ cup vegetable stock
1 teaspoon salt
1/4 cup chopped cilantro, squeeze lime juice and slivered almonds for garnish
Instructions
Heat the oil in a large pot on medium high, cook onions, carrots and zucchini until soft.
Stir in turmeric, curry, garlic, thyme, and cook for a minute, stirring constantly.
Add rice and stir until rice is fully coated yellow. Add coconut milk, vegetable broth and salt.
Bring to boil, cover and reduce to simmer on low for 15 minutes or until sauce has thickened.
Remove from heat and stir in cilantro leaves, a squeeze of lime juice. Add chopped almonds for extra texture optionally.
