If you like tuna melts, you are going to love these high protein tuna melt egg cups. They are so easy to make, low carb, high protein and delicious! Perfect for an on the go snack or breakfast!

Makes 18 cups
INGREDIENTS
2- 5 oz. can of tuna fish, drained and shredded
4 large eggs or ½ cup plus 3 Tbsp egg whites
1/2 cup sour cream or blended cottage cheese
1/2 cup real mayonnaise
½ cup green onion, chopped
1 cup shredded violife cheese
½ tsp salt and black pepper
20 slices jalapeños from a jar
Preheat oven to 375
Add all ingredients to a bowl and mix together. Pour into silicone cups or a muffin tin. If using silicone make sure you have a sheet pan underneath
Bake for 20 minutes or until the top of the eggs are set and not runny anymore.
Pull out and let cool. Enjoy!
Will hold in an airtight container for up to 5 days!
