All the delicious ingredients of the infamous pad Thai in a cucumber salad. This makes it low carb, and full of extra vegetables and fiber to having you feel full and satiated.

1 cucumber thinly sliced
1 small carrot shredded
2 green onion sprigs chopped
1 tbsp cilantro chopped
2 tbsp chopped peanuts
1 tsp chili sauce
1-2 tbsp peanut butter
1 tbsp rice wine vinegar
1 tbsp coconut aminos or soy sauce
1 tsp sesame oil
1 tsp sugar
1 tsp hoisin sauce
Splash of fresh lime juice
Optional
½ cup chopped tofu
Slice your cucumber and add all your ingredients to a container with a tight sealing lid.
Shake well till everything is combined.
Enjoy!
