Thai Holy Basil Tofu
Ingredients
2 tablespoons avocado oil
1 tablespoon chopped garlic
1 Tsp red chili flakes
1 container pressed mashed tofu
1 cup sliced red and green bell pepper
½ red onion sliced
1/2 cup Thai holy basil sliced thinly
1 1/2 tablespoons fish sauce
1 tablespoon hoisin sauce
1/2 tablespoon brown sugar or monk fruit
2 tablespoon coconut aminos
½ cup vegetable stock
1 Tsp cornstarch
Directions
Heat the oil in a large saucepan or wok at high heat. Add red onion and bell peppers. Sauté until softened. Around 3 minutes. Move to the side.
Crumble the pressed tofu with your hands and break up till it resembles ground chicken. Add it to the pan. Cook for 2 minutes.
In a bowl add last 6 ingredients to make sauce. Whisk together.
Add in garlic and red pepper flakes to tofu. Sauté another minute.
Add in sauce. Mix until thickened. Add in basil.
Serve immediately alone or over jasmine rice or cauliflower rice.
