Try these delicious high fiber, low calorie, low carb vegetable waffles. It’s the perfect way to incorporate more vegetables into your diet. And they are delicious!

Makes 10-12
1 zucchini shredded
1/2 yellow onion thinly sliced
2 carrots shredded
1/2 red cabbage shredded
3 eggs whisked together
1 cup vegan Mozzarella shredded cheese
1 1/2 cups almond flour
Seasonings
Garlic powder
Mushroom powder
Black pepper
Blend together. Heat a waffle iron, spray to keep from sticking. Add about 1/4 to 1/2 cup. Cook and enjoy!
Can be eaten alone, with sauce, with an egg on top. As a sandwich bottom, just to name a few ways to enjoy!!
Holds in the fridge for 5 days or also can be frozen. Place parchment paper between each to keep from sticking to each other and store in a sealed container or zip lock bag. Can be reheated in the microwave for 1 min or toaster oven.

2 tablespoons chopped fresh parsley
2 tablespoons chopped green onion
2 teaspoons smoked paprika
2 teaspoons white wine vinegar
1 clove garlic, minced
1 tablespoon mayonnaise
Kosher salt and freshly ground black pepper
