Learn how to make these healthy, quick, delicious savory Korean pancakes with dipping sauce!

Pajeon- Vegetable Korean Pancake
Makes 6 pancakes
Ingredients:
1 cup all-purpose flour
2 tbsps cornstarch
¼ teaspoon sugar
½ teaspoon kosher salt
1 ¼ cup seltzer water
1 lightly beaten egg
½ cup scallions, chopped
½ cup shredded kimchi
½ cup corn kernels
½ cup shredded carrots
2 Tbsp avocado oul
Sauce:
Mix these ingredients in a small bowl:
½ cup soy sauce or coconut aminos
¼ cup rice wine vinegar
2 Tsp sesame oil
chopped green onion
1 tbsp sriracha
Make batter by mixing flour, cornstarch, salt and sugar.
Make a well in the middle and add the beaten egg and seltzer water. Mix together.
Additionally, fold in the veggies you want.
In a large heated pan, put oil or cooking spray generously in pan.
Spread the batter evenly into a circle. Let it cook evenly on the bottom for 2 minutes.
Gently flip the pancake over. Cook until brown on both sides. When finished, put on a cutting board and cut into squares.
Serve it hot with dipping sauce.
