Try these easy gluten free vegan egg rolls. Made in the air fryer. These are a wonderful, healthier alternative to deep fried egg rolls.

2 tbsp avocado oil
4 beyond meat sausages minced
3 cups cabbage, shredded
1 cup carrots, shredded
1 tbsp ginger, minced
3 cloves garlic, minced
2 tbsp coconut aminos
2 tsp sesame oil
1 tbsp rice wine vinegar
1 Tbsp chili garlic sauce
1 Tbsp sesame seeds
¼ cup green onions
21 rice paper wrappers
2 cups warm water
Start by making egg roll mixture.
In a large pan or wok add oil.
Add in ground sausage. Break up and cook until browned. Around 5 minutes.
Now add in shredded cabbage, carrots. Stir and add a lid. Steam for 3 minutes.
Remove lid and mix in green onions, ginger, garlic, sesame seeds and sauce mix of coconut aminos, Sambal, sesame oil, and rice wine vinegar.
Mix everything together and pull off heat.
Next in a shallow pan fill with 2 inches of water. Place your rice paper in the water, covering it fully for 10 seconds.
Pull out of water and set it on a flat surface.
Place 2 tablespoons of filling a third from the bottom in the middle.
Fold over the sides and then roll up the bottom like a burrito. Set aside. Should make about 12-15 rolls.
Spray your air fryer baskets. Add as many rolls inside as long as they don’t touch. Spray rolls with cooking spray.
Bake at 400 for 10 minutes.
Remove and serve with favorite dipping sauce.
