This is for all of you egg salad lovers out there. Try this easy quick low carb version using a whole cucumber! Great for people looking to add some extra vegetables in their diet. You won’t even miss the bread!
Additional Information
Ingredients:
1 cucumber sliced
2 eggs chopped
2 tbsp green onions chopped
2 tbsp fresh dill
2 tbsp mayo
1 tbsp Dijon mustard
1 tsp smoked paprika
½ tsp garlic powder
1 tbsp capers plus some juice
Dash of Tabasco
Salt and pepper
Directions:
Slice cucumber and add it to a larger sealable container.
Rough chop 2 hard boiled eggs and add to container.
Add in remaining ingredients.
Shake vigorously and enjoy.
Can be eaten on its own or on toast!
