Turkey Meatballs with Marinara
Ingredients
1 pound turkey
1/2 cup Panko breadcrumbs
1/2 cup crumbled Feta cheese
1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry
The zest of one fresh lemon
1 Tsp Dijon mustard
1 egg, beaten
1/4 teaspoon kosher salt
1/2 teaspoon black pepper pepper
Garnish Optional
Parmesan cheese
Fresh Basil
Marinara-
Jar of favorite marinara
1 tablespoon italian seasoning
½ tablespoon red chili flakes
½ cup yellow onion
2 garlic cloves minced
Splash of Balsamic Vinegar
2 tablespoon olive oil
2 tablespoons chopped basil
Directions
Make the sauce: In a large nonstick skillet, heat oil over medium-high heat.
Add onion, garlic and cook about 1 minute. Add Italian seasoning and red pepper flakes. Add in splash of balsamic vinegar.
Now add in Marinara with ¼ water, rinsing the jar. Bring to a boil, lower heat, and simmer.
Make the meatballs: In a large bowl, whisk together egg, add lemon zest, feta, bread crumbs and thawed spinach.
Add turkey. Mix well. Season with salt and pepper. Roll meat balls out. Make about 10.
Add meatballs to skillet, brown on all sides and then add to a 400 degree
Oven for 10 minutes or until meatballs are firm. Remove from oven and add meatballs to marinara.
Garnish with fresh basil and Parmesan cheese.
Serve alone or over pasta.
