Learn how to make two simple vegetarian side dish for almost every occasion. We will make jalapeno cheese corn bread and pan roasted brussels sprouts with balsamic vinegar!

Jalapeno Cheese Cornbread
1 cup all-purpose flour
1 cup yellow cornmeal
¼ cup white sugar
1 teaspoon salt
3 teaspoons baking powder
1 egg
1 cup milk
1/3 cup vegetable oil
1 jalapeño deseeded and minced
1 c shredded cheese
1 c canned corn
Cooking spray
Preheat oven to 400 degrees.
Spray 9x9 pan with non stick spray.
Combine all dry ingredients into a bowl. Stir well.
Add wet ingredients. Stir
Add in jalapeño, cheese and corn.
Mix.
Pour into your prepared pan and baked 25 minutes.
Allow to cool, and then cut. Serve with our honey butter.
1 lb Brussels sprout
8 garlic cloves
1⁄4 cup extra virgin olive oil
3 tablespoons balsamic vinegar
salt & pepper
Preheat oven 425*.
Trim end of Brussels sprout and pull off any loose outer leaves. Slice in half, lengthwise.
Place Brussels Sprouts, garlic, olive oil, vinegar salt & pepper onto a baking sheet or shallow pan.
Roast in oven for 20-25 min until tender. Stirring occasionally.
