Try this easy, delicious egg salad recipe. And watch how easy it is to make hard boiled eggs in an Instant Pot!

6 Hard Boiled Eggs
¼ Cup Green Onions
2 Tbsp Dill
3 Small Baby Dill Pickles Diced
1/2 Tsp Pickle Juice
1 Tbsp Dijon Mustard
1 Tbsp Horseradish
2 Tbsp Mayonnaise
1 Tsp Smoked Paprika
¼ Tsp Salt and Black Pepper
Start by cooking eggs.
If using an Instant Pot add 2 inches of water to pot. Add the eggs to a steamer basket or trivet for Instant Pot. Turn on Manual for 5 minutes. When it’s finished let it slowly release for another 5 minutes and then Quick release the rest of the steam. Add to a cold water bath and peel.
In a bowl mix the mayo, horseradish and dijon mustard and pickle juice until smooth.
Dice pickles, green onions and dill.
Add to the bowl.
Take the eggs and grate into a bowl. Fold them into the mayo mixture.
Add in smoked paprika, salt and black pepper
Serve with bell peppers, cucumbers, bread or crackers.
