Cooking beans can be easy and fun with some simple short cuts like using canned beans and using a pressure cooker. Check out this delicious, quick bean chili using canned beans and an Instant Pot. You’d swear it was made with it being in the stove for hours!

Servings: 6
2 tbsp avocado oil
2 garlic cloves
1 onion, diced
1 lbs plant based beef ( I use Beyond Beef)
1 green pepper and red bell pepper diced
1 jalapenos, finely chopped
1 Sweet Potato Diced
1 (14 ounce) can Mexican-style tomatoes
1 8 Oz can tomato sauce
2 tablespoons cumin
2 tablespoons chili powder
2 tablespoons unsweetened cocoa powder
1 teaspoon salt
1 teaspoon cayenne pepper
1 tablespoon smoked paprika
1 (14 ounce) can cannellini beans
1 (14 ounce) can black beans, drained and rinsed
2 cups veg stock
Garnish-
Lime
Sour cream
Cilantro
Cheese
Pepitas
Corn chips or crackers
Green onions
Directions:
1 Start with 2 tbsp avocado oil..
2. Sauté beef for 3 minutes. Add onions, garlic, peppers and potatoes. Sauté another 3 minutes.
3. Add tomatoes, sauce, seasonings, and stock.
4. Turn On Instant Pot for 8 minutes. Quick release when finished and add in your canned beans. If using a stove top method you want to simmer your ingredients on the stove with the beans for 25 minutes.
5. Serve with garnish
