Enjoy this quick high protein salad. Just like your favorite Italian sandwich, only a low carb version. Still satisfying with all the flavors.

Grinder Salad
2 cups romaine lettuce, chopped
1 cup iceberg
1 cup cherry tomatoes, halved
1/2 cup red onion, thinly sliced
1/2 cup pepperoncini, sliced
1 cup salami slices, cut into strips
1 cup turkey slices, cut into strips
4 provolone cheese slices, cut into thin strips
Dressing
1/2 cup mayonnaise
1 tbsp red wine vinegar
1 tbsp pepperoncini juice
1 tbsp olive oil
1 tsp Italian seasoning
Salt and pepper to taste
Directions-
Whisk all dressing ingredients together in large bowl.
To the bowl add all the remaining chopped ingredients.
Mix together and serve. If portioning out the salad for later use, mix the dressing separate and add to salad when eating.
